The truth is there are many ways you could change your pancake recipe: you could try using buttermilk instead of regular milk, you could trade your trusty maple syrup for chocolate syrup, or you could try a completely different recipe and make banana pancakes.
Using only a banana, two eggs and some cinnamon, you can make delicious breakfast food that will remind you why this is the most important meal of the day. All you need to do is get a very ripe banana and mash it in a bowl with a fork. Then, just add two eggs and about 1/4 teaspoon of cinnamon and mix until the batter looks homogenous.
Remember to preheat your frying pan for a couple of minutes, then pour a spoonful of batter and let it cook for about 3 minutes. Flip it and cook for another 3 minutes. Serve with maple syrup, honey, or condensed milk.
